I have made new tests with JRiver and Whitebear. This time, I have chosen both options "DLNA Server" and "DLNA Controller" in the Media Network options, but it still doesn't work.
My Touch doesn't have the same behaviour as with my previous attempt (without choosing "DLNA Server") : now when I play a track in JRiver, my Touch keeps displaying something like "Adding http://192.168.30.14:52100/Music/F26891.0.flac to the playlist", and then "Connection reset by local host: http://192.168.30.14:52100/Music/F26892.0.flac";, and then after a couple of seconds JRiver moves on to the next track of the album, and the Touch displays the same messages and so on, and so on... Does that mean that Whitebear is currently not compatible with JRiver ?
