I've been some testing and have a mixed set of results.
To try to get similar results to yourself - I booted up my Windows and
updated my VLC from 0.9.6 to 1.1.7. Once I did that I got a lot of the
problems that you have been noting. Looking through vlc forum complaints
about logging it appears proper logging to file was broken on Win32
version of VLC from 0.9.8.
I also tested a version of VLCplay to play FM stations from my
Hauppauge Tuner card (Analog TV/FM) with VLC 1.1.7.

This uses Windows DShow interface which is similar to the DVB
interface. On my Vista system a variation of this (using mux=raw)
played on my SB3 for 10 hrs without any problems. This would seem to
prove that the back end of the conf file (i.e. wav->flac) does not have
a problem.
When doing the VLCPlay test - I also tried various ways to get logging
without success. I think the problem is socketwrapper creates process
without any main "Window" and VLC doesn't seem to like it.
So I think your problem is either with the DVB signal, the DVB driver
or VLC handling of DVB stream. So there is a need to get a test to
fail outside of SBS.
Below is a command line which is very similar VLC command line used in
VLCPlay but which can work in a batch file.

The above line works to play an FM station and discard the output.
You can modify the line to suit your card and to test also change the
"nul" to a file name say testvlc.wav. Then save in a batch file and run
from a command prompt - you will get a logger and GUI window. When you
stop the VLC process - there should be a testvlc.wav file and this is a
proper WAV can be played with WMP or VLC.
Once you know the batch file works you can then change the dst back to
"nul" and then run the bat file to see if it fails.
If you can make VLC fail outside of SBS while discarding output - then
getting logging working on that setup might be easier perhaps even
installing VLC 0.9.6
