Yes, that should work, you can redirect all audio outputs of an iPhone to Bluetooth speakers and iPeng does respect the audio route (so it also works with AirPlay). I've only tried it with mono headsets myself but stereo audio should work, too, at least with iPhone models that support them (old ones did not).
