I don't have a clue how to configure ALSA in the way you say - can you
give me a hint as to where to go and find out?  (There is such a vast
amount of stuff to learn, know and remember, and I don't find much of
linux 'intuitively obvious').  I don't even know if it is possible to
do this on my old (2003) laptop.

As to your suggestion of VLC, how would I get the Touch to 'see' the
output from VLC?  I can imagine it could if VLC looked like an internet
radio on my internal network but I don't see how I could add that http
station to the Touch.

Server on Windows 7 Ultimate 64 bit, 2 CPU, 2GHz, 4GB, FLAC files. Touch
on Ethernet (in another room).  Analogue out over 'a bit of wire' to
ageing Quad Hi-Fi. An old (wireless) laptop controls the server using
Chrome.
