This sounds like your server is really busy doing something. That something is very likely one of A) converting album artwork to the sizes iPeng uses - in this case it should eventually start showing up B) scanning. Are you sure the server is not still scanning? 7.7.x can take much longer for this since it will also scan all images and movies it finds, it sometimes stalls while doing this.
