You could use a dock that also charges the iPad. There are no more
connectors on the iPad :)

Apple gives no official information whatsoever on this, no wonder, it's
not their implementation and results will vary wildly based on the DAC
you use.
The connection to the DAC is a normal USB audio protocol, I have no idea
what exact format is being used there but it will certainly be some kind
of PCM.
AirPlay uses ALAC for all transmissions.

There is also HDMI over lightning connector which will uses other
properties, depending on what the accessory implements. All of this
entirely depends on the accessory implementation, the only limitation
that resides on the iThingy side is the limitation of the supported
audio formats, in iOS 7 this was 96kHz, 24 bits, in iOS 8 I actually
don't know. Internally iOS supports metrics of up to 192 kHz, 32 bits
(although that doesn't mean this is actually what's being used, you just
can configure this as the reference frequency).
