Thanks bpa, I've browsed a bit more and it looks like the tgt package should be my best friend to make a "regular" blockdevice appear on the server. I think I'll grab one unit and try to make it work. If I can't, worst case I'll use it as an USB drive; the Apple guys have lost the tool needed to make a slot in the mac mini anyway...
I'll post something if I can manage a setup with this device. (I'm more and more wary of linux; Jessie ships with a broken automounter, and no-freaking-body cares...) I believe a "loopback" plugin is a very nice idea. With people cramming Pi's everywhere they can and digitizing old stuff, I see some potential. The only limitation I see to it is that people now are using more software players than hardware ones and sync is not as good as before.
