After hours of reconfiguring the SONOS config, I can't see why AAC
native doesn't work. In fact, the stream appears to start (without any
sound output) counts up to about 30 secs, then resets back to zero, and
cycles back to 30 secs. It isn't possible to pause the silent stream -
it just recycles back to zero.

Is it the case that Sonos upnpbridge can't use AAC native ?

The problem is that when transcode is used to handle a AAC stream, then
faad doesn't exit when the stream is stopped. The only way to stop faad
is to disconnect the Sonos.
