I needed to modify existing software in order to implement "Update All Items" functionality in a shopping cart. Previously, the user would update an item in the list of items individually - each item is contained in it's own uniquely named form on the page with it's own submit button. Basically, I used JavaScript and WDDX to serialize the state of the forms on the page when it renders in the browser, and do the same when the Update All Items button is clicked. The button is in it's own form and passes the serialized original state and the serialized updated state along in hidden form fields. The target page then un-serializes both into structures and loops through the original and updated values, and where they're different it calls the existing "update cart" functionality on that item. If this sounds like something you can use, let me know and I'll send you a copy of the code.
