Could you expand a bit more on:

If you mean the "History" Tab -  yes this shows/retains the edits - but it is not in a nice easily readable format to the user, whereas the Profile page itself is neatly formatted.
The "users" of these wiki pages are largely "readers" of the information rather than editors/authors - so I wanted something quite simple for them.

Could you elaborate a little more? perhaps your form that you mention is the answer?

I can give you a quick wikish form which would make a copy of the page
with a different name or whatever, but I really think what you are
looking for already exists...
