I haven't investigated PoDoFo's PDF field support (it's in a part of the library I've never had any need to learn about or work on), but I'm guessing "no". PoDoFo is a low level library designed to give you access to the PDF document structure so you can do almost whatever you want with it ... if you know enough about PDF and what you want to do.
