How exactly does that mail that you claim Postfix transports verbatim
get into Postfix's responsibility? What is the software you use for
submitting the message that gets rejected later in the transport?

with /usr/sbin/sendmail being postfix's one. Postfix added the From:
header based on the invoking user's GECOS field.
