Could you run them side by side with the new server having a higher MX priority? Any mail arriving on the old server after that would likely be from spammers/scammers/malware (who like to target low-priority MX servers because they're likely to not be as well-maintained).
its possible to use content-filters or milters same as primary mx, then spammers loose :)
