Adding a catchall alias for a domain is as simple as adding a mailacceptinggeneralid attribute value: @example.com to an alias entry. (In phamm or other schema, just use the respective attribute.)
I am not sure what you mean by "domain to domain" aliases. Just note that LDAP-based aliases are *virtual* aliases and, if no domain is specified (i.e. if you don't use @example.com), they will apply to all incoming mail (even to domains not hosted on the server). So, always use a domain specification!
Note that the choice for a schema should take into account the administrative needs (if you want to use Phamm or GOSA or other s/w for administration).
In our case, we simply use an LDAP browser (phpLDAPadmin and JXplorer), but we have limited administrative needs, focused on particular domains only.
