Also, in /etc/amavisd.conf:

   $max_servers = 2;

...and I only see two amavisd processes (as expected); but these two take 49,9% of the CPU each.

So, any advice would be welcome.

One critical question, now, is whether I can stop/restart postfix/server without risking losing deferred mail messages!
