Simply, you can't show absolutely everything on the same map - and if that's true for viewing, it's doubly true for editing.
People's editing interests differ. Some people go for the "full survey" approach: take a housing estate or town centre, and map absolutely everything. Some people care about highways alone and aren't fussed about landuse. Some people are into buildings, others find them a distraction. And so on.
As an example, personally I'm very interested in UK path types (Restricted Byway, Public Bridleway, Public Footpath) and our various cycling routes (National Cycle Network, National Byway etc.), not much interested in landuse, and not at all interested in bus routes. But I wouldn't expect others to share my preoccupations!
So having customisable stylesheets allows you to focus on the editing you're interested in, without being distracted, or slowed down, by other stuff.
