I have a 1400cs with 60 RAM total, no G3; OS 8.6. It runs Photoshop 5.02 just fine, a little slow with big images but for household or web graphic use it's fine (I do 8.5x11 600dpi prints for work, and have done them on this laptop and it does it, but not quickly :) The limit for me is the screen real estate: at only 800x600 really cramps the Photoshop workspace; G3 would certainly help the speed, but it would still be a bit clunky for "serious" photoshop work given the lack of room on the screen for your work plus the layers etc tab windows, and of course "thousands of colors" isn't great for some uses either. If you are doing Flash stuff I assume fairly low res graphics for your Photoshop work, which will likely be just fine. I've not run Flash on mine yet but Dreamweaver/Fireworks does fine; Flash, I should install and see...but it has to be less intensive than Photoshop! So with equivalent RAM to what I have, and a G3 I think you'd find all the apps you mention very runnable, just a little crowded to work with given the screen space, as the most noticable problem in practice.
