Because of it's lower speed (compared to Ethernet for example) LocalTalk is more tolerant of poor topology so you can connect it in a star configuration just using wiring. As long as you keep the lengths in check it will work. LocalTalk only handles AppleTalk true but you can use IP over AppleTalk (MacIP).
