What you needed to do is do a custom install and choose the version of Mac OS that will boot any computer. Then 9.1 should work normally on a 5300. That said, 9.1 is too much for it. It will be slow as hell, (100MHz 603e and no L2 cache, plus 'tiny memory') so what I would recommend is OS 8.1. It seems to be a good balance between performance and features.
