No, I'm not using BootX at all.  I'm using the MkLinux booter.  But it 
does have an option for adding extra arguments.  In the booter's 
lilo.conf file you add a line "mach_options= " with the argument 
following.  I'll give it a try later today - I have to reinstall that 
hard drive before I can give it a go. ;-)

I tried using BootX 1.1.3b (or whatever it is recommended 
by nubus-pmac.sourceforge.net) but it actually didn't work at all.  
Rebooted to a blank screen and hung.  Every time I tried it. (no I 
wasn't using the HPV only BootX).

Are you using (the old, not the Darwin OS X) BootX? Put "single" in the
options box and it should boot into single user (non-X) mode. Putting
something like "3" might also do it by booting into run-level 3,
which by tradition is standard except without the X Desktop Manager
graphical login. (Pretty much everything configurable in Unix is done
by tradition and consensus, so it's got a very good chance of working,
unless you added something to, say, rc.local or similar).
