If SCSI can work _at all_, you can copy install files (with a small system folder for startup) or the disc image (w/ Disk Copy?) to your hard disk, start up the 5300 and, as long as you have enough room, do the install from you 5300. 2.) The install folder might have Apple Disk Copy images of the install. If so, you might be able to make floppies from these and do the install the old fashioned way. 3.) If _everything_ else fails, bide your time, find a friend with a 5300 or other compatible IDE Mac notebook, have them replace _their_ harddrive with yours and do the install on your hard drive in their notebook.
