There is a tool out there that lets you adjust the amount of 
processing power that FileSharing can draw on.  By default it is set 
rather low, to prevent FileSharing from loading down the local 
workstation too much.  I think the name is PowerShare.

What kind of network are you using (LocalTalk, Ethernet)?  If it's 
Ethernet and you can setup IP addresses, use the IP option in the 
FileSharing cp.  IP is more efficient as it uses a larger packet size.
