That's a pretty open ended question.
For browsers, I find that IE 5 is the most "Mac like" browser out there. Lots of people like iCab. I gave it a try (on and off since it was first "previewed", and I still keep a copy around), but I don't like it as much as IE. NS7/Moz is a must for some modern sites, however.
For email clients, Eudora 5 is pretty good. That's what I'm using to type this message. PowerMail, though not free, is awesome! I've used Musashi, but I found it less than stable (and it corrupted it's mailbox a few times). GreenPPC pretends to be Eudora, and it does a pretty good job. But it's less stable than Musashi, and it has constant crash recovery problems. Cyberdog still gets the job done, and I really dig using that older software.
