There are adapters that do it but it has been years since I have seen
any new ones. It looks like the USB enclosures with a male 50 pin plug
on it. I have one but I still use it occasionally.

Yes, that's right. I didn't learn a thing. My 520 died after only 9
months of use, and I bought another 500. I don't actually have the
PowerBook yet but it should be here by Saturday. Now, here's my
question:
Is there any way I can hook my old HD up at the same time as the new
one? I want to get all of my data off of it. Thanks!
You could put the old drive into a SCSI enclosure and use it as an
external drive, tho I believe you'll need an adapter to get the pins
to match the enclosure's cabling.
At Kfest this year (Yes, this Apple II convention still is going
strong. :) ), a friend of mine used a techie tool to take my old drive
from my 5300 and allow me to hook it up to my new aluminum PowerBook
so I could copy all the files into a subdirectory for later sorting.
This used a USB connection, but there might be something similar for
SCSI use too, I suppose--conjecture on my part of course.
