Yes, you point out the only fly in the ointment:  What if you are sending
an email to more than one person with a specified signature.

Perhaps the way out of this is to have a warning POP-UP stating something
like:

    "Two or more of the recipients have conflicting signature choices.
     Please choose a signature for this email or resend separately."

Note that when no signature is specified in my scheme, the default for
the account is used.

It should be pointed out that the above scenario is not likely to happen
that often.  The people to whom you are known by one persona will most
likely be a self contained group engaged in one part of your life.  The
other groups will likewise be composed of similar self contained groups.

Again an example is this list vs. work vs. family vs. other activity.
