I was recently advised by a member of the NY MacUsers Group on their
MetroMac website that the way to change the email default is:

"Launch the version of Mail that installs with Panther even though you
may want to use another email client as your default. Visit the
Preferences. Choosing the default email reader is the first pref. Select
your preferred mail client from the list or navigate to it if it doesn't
appear in the list. Now quit Mail and forget about it.

You will need Safari and Mail to reside on your system, whether you use
them or not, if you want to change your default email and browser apps in
the future."
