Return Receipt - No. This is a odd thing with Internet mail anyhow since a return receipt only tells you the mail exchange server received the mail, not that the final recipient ever read or even got the email. On proprietary mail systems, or intranets, the story is very different, but the reality of the internet with various hardware and software clients makes this difficult to deal with. The fact there there is no RFC defined standard for return receipts makes it even more difficult to implement. Color Code - Yes. You'll need to setup mail filters for the incoming messages and simply have filter change the label of the message. I use this for a few types of messages I filter.
