This is a tough request based on the current implementation of the way the outgoing filters work. Messages actually get sent prior to the message being filtered, so while you could fix the outgoing address via AppleScript, in order to automatically call it for a certain address you would have to manually invoke the script. This pretty much defeats the purpose of having an AppleScript do something for you. Your current method of manually changing the email address is about the best option I can think of at the moment.
