There are 2 features that would make PM perfect for me.  Neither is
essential, but both would save me a lot of time.

I wish I could place the cursor at a particular place in a message and
then, when I choose a sig file, have the sig file appear at the cursor. 
The reason is that many of my correspondents (who use screen readers,
Braille translators, and other assistive technologies) strongly prefer
me to type my message at the top of the screen, followed by my quoting
the part of the message to which I'm replying.  That is to say, they
want my reply to appear above -- rather than below -- the message to
which I'm responding.  Maybe I'm unaware of a PM feature, but the sig
files always seem to appear below all the text on the screen, and I have
to move it.

The other feature I'd love is a re-send function that would prepare a
message for re-sending while leaving all addresslines blank.  Currently
(again I may be ignorant of a PM feature, an Applescript, etc., that
does what I want), I have to either use the duplicate function, which
requires me to erase all the entries in the TO, CC, and BC lines, or use
the forward function, which requires me to erase the forward notation in
the subject line, the forwarding headers in the message section, and the
"end of forwarded message" notation at the end of the message.

But I've been extremely happy with PM, having moved to it from Entourage
last April.  (One of the most valuable features for me is that I can
easily ensure that everything I write, forward, or cut and paste into my
message is sent exclusively in ascii and not in ISO-8859-1, HTML, etc.)
