You can even run a Classic version and an OS-X version of Photoshop 7 at the same time. I do this often to make use of one nagging plug-in that's slooow in moving to OS-X (the buggy but very useful FotoPage). Just duplicate your Photoshop 7 application package. Using Get Info on the second version, set the option to open in Classic. As long as the OS-X version of Photoshop is launched first, you can launch both. They will peacefully operate together even though they share the same serial number on the same computer. I keep both in the dock and move from Classic to OS-X Photoshop depending on what task I need to accomplish.
