Dear Owen,
Photoshop 7 has moved the colour management options slightly. Select
Print with Preview, tick 'show more options' - just below the preview.
Select 'Colour Management' from the menu below (it will probably say
'Options' to start with)
You can then select the document and print space as per Photoshop 6
