As Jorge Parra pointed out, using Print2PDF is an excellent way to make PDFs. Easier still, however, is OS X's ability to save anything which can be printed as a PDF.
Apple seems to be moving towards adopting PDF as the primary choice for saving anything, in fact, all screen shots are now resulting in PDFs. The only drawback I have found to portfolios on PDF is that they can be quite sizeable. Also, many people seem quite unaware that PDFs have a splendid slideshow option. -- Thomas S.
