I'd guess the rationale behind the current system is that after you get done adjusting, you crop the image back to the same pixel dimensions as the original. If someone already has the image cropped to fit a layout this could be important. Pivoting on the middle would make it necessary to crop to a narrower format, and some people would complain - "Hey, this made my picture smaller!" A select few would probably just stretch the image's width back to "normal." So, I guess just do it the hard way and know that you're doing a superior job of it.
