As I shoot quite a lot of my work now digitally  on a Canon D60, I have the
EXIF information ( Camera, date, shutter speed, exposure etc. etc.) recorded
as well. This information is handy for my image data base etc. so I want the
camera record it. My problem is, when I want to send the file to a client
they can read all this info if they have PS7, which may not be desirable. If
they have PS6 there is no facility to read such data. I don't seem to be
able to either hide this info or delete it.

If you do Control-A to select all of an image, Control-N to create a new
blank image of the same size and type, and then copy the first image into
new empty one (Control-V), you will find that there is no EXIF data in the
duplicate.
