The simplest and cheapest way that I found was to

buy a Radeon 7000 series dual card with TV out which means that you can record onto a video anything that is showing on the main screen as well as having dual monitors.

Its a basic set up though only allowing calibration of
the main monitor, but as I use the second screen for
tools or a second web view I find it's fine. Could not
go back to single monitor now.

A word of caution, I have found that the latest
drivers are not as good as the previous ones on my
setup.

if you want highest quality output (in terms of sharpnes) from both monitors, the only way to go is Matrox (and careful selection of the monitors). The lower cost version (100..120 Euros in Austria) is a G550, which can output to two analog monitors, or to one digital and one analog monitor (which may also be a TV set, if you care - signal quality is better than the competition also in this respect). Additional advantage: No fan on the graphics chip -> no noise. If you want to play the latest games, however, this card is not the best choice. If your budget is big enough, you can also take a look at the Parhelia: Three monitors, three times the price, 10 bits per color (instead of the usual 8) with a special PS plug-in...
