Wellllll, Actually, THIS way is easier and permanent.....pdf is the native display mode of OS X. Therefore Preview is the Default. If you want them to OPEN in something else....select any jpg file, GET INFO on it, and next to the arrowhead that says: Open With....choose the application you want JPEGs to open in, instead of Preview, and click the button marked CHANGE ALL.

If you inport them using the Image capture app in OSX you can specify they auto open into whatever image program you happen to have on your system
