I've just been pouring through this type of thing myself. I'm not interested in 360 work so much as simply mosaics of stitched images to form a single very high res shot. I'm using a 14n to stitch together multiple frames for very high res architectural shots. The equipment, software and techniques are pretty much the same for either. Any of the software based around Panotools is the most powerful and versatile. There are several programs available that put more workable interfaces on PanoTools so that a novice can find their way around this stuff at least a little easier. Start with these links and you'll have more than enough info to keep you going for weeks of reading.
