Well, as usual, it depends on how serious you want to go, and how much you can/want to spend. If you want to stick on cylinders, or go cubic (360X180 degrees, you can see ceiling and ground). You must start with a pano head. I have a Manfrotto 302 kit, already replaced by 302 Plus - but I think both are still available - , yet there are many others, more or less expensive, more or less reliable, more or less difficult to setup.
For cylinders you can use a rectilinear short lens, or even a Full Frame Fisheye (but QTVRAS does not accept the later); for cubics there are slow, high-quality ways to use these same lenses, but I'd go for the Sigma 8mm - with just 4 shots 90 degrees apart you can make a very beautiful cube.
To stitch the 360dg picture, you can use QTVRAS (QuickTime VR Authoring Studio) for cylinders - in spite of it's age, it's still the best and easier to use. If you have time to slowly learn, there is PanoTools and his GUIs, PTGui and PTAssembler for Wintel and PTMac for the Mac.
