When you choose a paper setting in a printer driver you essentially choose a paper linearization. The paper setting you choose with an Epson printer is a setting that makes sense on that particular brand of EPSON paper. If you change paper or especially Ink no one can tell what happens. Whether it has a cast prior to profiling doesn't matter all that much though (if you have someone clever do your profile) as the profile will effectively remove the cast. It is more important that the tonality is good. If you want really superior results you should probably consider investing in a good RIP (not he Epson Stylus RIP) as this will allow you to make your own linearization that is appropriate for the ink and paper you're chosen to run with. It's requires a lot more work though...
