With a slight work around it's sort of possible - but it only works for CMYK
profiles - NOT RGB due to a bug in PS7.
1). Select the CMYK profile you want to do the gamut warning on:
2). Choose Select > Color Range, and select Out of Gamut
3). Make a new layer and fill this with a colour of your choice (Gamut
Warning by default uses Grey). This will fill the current selection which is
all colours that are out of gamut.
4). Print

Beware though, that this only tells you if a colour is out of gamut, not
whether it's 1% out of gamut or 50%...

PS. The bug (hey it may also be a feature) is that the "Out of Gamut" in
Color Range dialogue box SHOULD work on the Proof Setup, but it always works
on the CMYK working space.
