Hit the reset, set the gamma, open settings, go to colorsync, set everything to none, set USM to -120 under amount and save this as setting. Scan the target, make the profile. Open you saved setting, set it up to use your custom profile under input, and choose your working space of choice (or select none) under RGB. Check Embed profile and possibly convert. Then every time you scan with this profile you simply select this setting and the reset of the histogram is already performed.
