Becky, Try using the 'Replace Colour' option under Image/Adjustments (working on a copy of the background image of course!). After lassoing the background, use the light colour picker in Replace Colour and select a white (or as close as you can get) - adjust the fuzziness slider to encompass the whole of your selected area and then move the Lightness slide until you are happy. This works much better than the levels option (which I used to use before) because it only affects the 'colour' you have selected.
