Johnathan, this is basically where the concepts of profiling and characterisation/calibration usually merge and the differences become blurry. In common scientific terms what you are doing is totally common sense and is referred to as an internal calibration . Profiling would be the refined output via software of this calibration procedure and additionaly presumes that you will be able to use that profile for all varied conditions the camera will be facing in the future, something an internal calibration is -by definition-, unable to perform. I have not tried the eyeone or any other software package, with the exception of PhotoRetouchPro, which offers the choice of shooting the Gretag chart, the Kodak IT8 chart and other targets,in full frame, and the resulting frame is captured in a graphical grid specifically devised for the target . The software compares the color patches obtained from camera with pre-determined values ( embedded in the program) and a resulting "profile" comes out of this. Basically many of the current profiling software packages work around the same method. My point here is that you can "get used" to use one such profile for basically all of your shots, BUT , as soon as you need precise rendering, then you will be better off re-shooting the target under your specific working conditions , just to make sure everything is ok, just as you ( and many) are doing ( but without involving a software package, but simple and effective curves), and then we are back again, closing the loop and returning to homebase, this is , reshooting the target every time...THis is the moment when I question the software packages and their real effectiveness. IMHO, and regardless of the currently available software package (perhaps some good surprises are on the way), this proven method is just a healthy way to proceed and avoid disaster, or at least to save hours of boring computer time.
