Stephen Have recently suffered similar issues on an Epson 890 after loading 10.3.3 on a new G5. Worked fine on old machine but not good on the new one.
Jack Lowe very kindly pointed me in the direction of the print drivers, specifically the Gimp print drivers that auto install when Panther is installed, which can override the Epson drivers without you knowing it. You might like to try and re-download the Epson drivers for the 2100 and then go into the Configure Printers dialogue box on your Mac and set up a specific printer config for the new drivers/printer combination.
