Is there a simple way to apply the settings the camera (Canon) would have used to make the JPG automatically to each RAW image so that I am not starting from scratch with each one? Does the camera save all this extra info in the RAW file?

If you select "auto WB" on the camera and shoot RAW, you can develop the file using the WB the camera set when shooting. If it�s very off, just pick another one, but you certainly will start with closer values.
