Adam Not sure about your full bleed problem, but the print quality sounds like your Mac is using the Gimp Print drivers that install automatically with OS-X.
I had a similar problem (as have others on this list), and the fix is to use the System Prefs>Print & Fax dialogue to ensure that you are using the Epson drivers, not the Apple drivers. If you click on the "Set Up Printers" button, the system should show you both Apple and Epson drivers. (The Epson ones on my system show as SC(1160)USB and SP(890)USB.) If you use these when sending jobs to print, your prints should return to normal high quality. Some people I know have actually un-installed the Gimp drivers, but I'm not sure what side effects this has? Hope this helps.
