You are not alone. John O'Donnell sent this for an 1160 print problem a while ago. Hope it's of use. Also have a look at;

Have you recently installed Panther? If so you installed an open source
driver called GIMP-print which is as yet unimplemented but conflicts with
Epson drivers. What follows is excerpted from Epson tech notes.
Problem:
Customer has performed an upgraded to OS X 10.3 (Panther).
1. The overall printing process is unstable. The system becomes unstable
even if a smaller size print is attempted. With larger jobs (above 330MB -
layouts larger then 24x24) the print jobs will stop after printing few lines
causing the computer to lock up. To recover both the printer and the
computer has to be restarted.
2. Customer is not able to add the printer when selecting Epson USB but
does see the printer when selecting USB which generates "driver not
installed" message. Customer cannot add other paper sources because printer
does not show up when selecting Epson USB but does appear when USB is
selected.
Solution:
1. If the customer was experiencing the same printing issues under OS
10.2.8 or below and has only performed an Update or Clean Install the same
printing issues would be carried over into OS 10.3. The correct way to
upgrade to OS 10.3 is to perform an Erase and Install and do not install any
of the GIMP drivers provided by Apple. To minimize printing related
conflicts and issues follow the recommended OS 10.3 upgrade instructions
below.
a. With the MAC OS 10.3 CD disk 1 in the CD-ROM drive, restart the
computer holding down the C button.
b. Select English as the language.
c. For the next 3 screens, just click on Continue.
d. Click Agree on the License Agreement.
e. Then select the drive you want to install the OS on.
f. Click on Option and select Erase and Install option. Then click on
Continue.
g. On the Easy Install screen, click on Customize.
h. Click on Printers and de-select all printer drivers.
i. Then click on Install
j. Continue on with the installation
k. When finished, download and install the appropriate ProGraphic Epson
driver from Epson's web site.
Note: With the recent launch of OS 10.3 Panther, Apple has also included
GIMP (GNU Image Manipulation Program) -print driver, printer driver
developed by Apple for various printer models which can also introduce
printing issues. The GIMP-print driver is neither a working driver or
supported by Epson. If customer installs the GIMP-print driver when upgraded
to OS 10.3 Panther, it will conflict with the Epson OS X driver.
2. If the customer has done an Erase and Install and has selected the GIMP
drivers during this installation they can follow the steps below for proper
removal.
a. Go to the MAC hard drive.
b. Go to the Library folder
c. Go to the Printer folder
d. Drag the Epson folder to the Trash.
e. Close all screens.
f. Click on Finder then select Empty Trash.
g. Restart the computer.
h. Download and install the appropriate ProGraphic Epson driver from Epson's web site.
3. For the best printing performance always upgrade to the latest revision
of the OS.
Cheers
