HTC Hermes/Wizard on the things you asked...

In order of real preference.
1) PDA = Planner, messaging, tiny games.

Yes, that's what it does.  You can even get a dos emulator for it if you
want to play some old dos games, mind transport tycoon deluxe is more
than enough fun!

2) Remote Admin to my system so I didn't need a laptop in an emergency

Its got a Terminal Services Client that can do that for you over 3G
(Hermes only) or Wifi.

3) Phone

Well yeah.

4) Bluetooth so I can have two hands free.

Yep!  Got it hooked up to my Parrot CK3000 Bluetooth car kit (Hands free
device) and my Bluetooth GPS device which works great with TomTom!

5) memory card holder so i could transmit data from an SD card via USB

Runs an mini SD card.  You can get up to 2GB sized mini SD cards.  Make
sure you get one which comes with a full size adapter so you can use it
in card readers.

or wifi  <<< Not a deal killer

Get wifi B and G specs and works a treat!

6) Play music while I am at the rack

Windows Media Player, or a shed load of other free media players that
you can download.  Hell, I even put DVD's onto the SD card to watch when
travelling.

7) Work in an international setting

Not sure what you mean?  Quad Band so should work pretty much
everywhere.

Thanks for the reply and the heads up on the 8125.

I have the VS, and making interfaces to do a quick look-up are what I'd
like to try.

Cingular and T Mobile are the players in that last environment, #7. 
Sprint sucks overseas.
