My GM found an Epson that's about $200 more and has over 2000 lumens. Would I notice a difference between 1500 and 2000 or are we splitting hairs at that point?

I don't know whether it is a good idea to point out to you the inverse square law here: if you wanted to achieve the same screen brightness with the projector 50% further from the screen, the projector would need an output (in lumens) 2.25x greater (1.5 x 1.5 = 2.25). You can do the calculation in reverse to calculate how much further away from the screen the more powerful projector can be and still achieve the same screen brightness. These calculations assume that you are using the same focal length of lens and that the lenses are of comparable optical quality.
