Sure, I do it all the time. I use Adobe PDFwriter, and some West Wind magic to modify the System.ini file on the fly. I wouldn't recommend that, though, as it means purchasing Adobe for each client, and there are no guarantees on how much longer the "modify system.ini" trick will be supported.

In my newer clients, I write to the Apple PS printer (should be available on all versions of windows) and then use Adobe converter to convert to PDF. Bypasses the system.ini magic, but still has the "buy Adobe" drawback.

In my NEWEST rewrite, I plan to use Apple PS printer to PS, and then use open source GhostScript to convert to PDF. I just haven't gotten around to playing with it. I would recommend that last approach, OR save yourself some headache and purchase the PRO version of CutePDF, which will let you programattically(?) specify the output. Also, Google "Lisa Slater Nicholls" and pdflistener, for an excellent step by step tutorial.
